Ladies and gentlemen, a classic of Czech delicacies, a Parisian salad that makes fun of all diets and fit lifestyle! In its outrageously good vegan version, i.e. with vegan sausages, it will make you enjoy a typical Czech salad in a meatless version.
The fact is that vegan “cold cuts” in the Czech Republic are still far from being ideal, but you can try to slowly work with them and create some dishes similar to the traditional ones. Today I used the cheapest vegan sausages bought in one of the big supermarkets. I normally don’t eat them because they lack flavor and character, but they turned out to be perfect for this salad!
PICKLES – I use those from Znojmia, always 5-7 cm, they have the best taste and are always crispy. You can also use homemade or pickled cucumbers, they will also work well in this dish.
PEAS – up to you here, you can use canned, frozen or fresh (which you have to boil a bit first!) Doesn’t matter which one you’ll use, it will taste good either way.
INGREDIENTS
- 1 pack of vegan sausages
- ½ cans of green peas
- 4 pickles
- ½ a small onion
- 2-3 tablespoons of vegan mayonnaise
- 1 tablespoon of Dionese mustard
- salt pepper
PARISIAN SALAD – PREPARATION
- Put vegan sausages into boiling water and cook for 3 minutes until they are soft and easier to slice. Cut each into 3 and cut each part into thin strips.
- Also cut the pickled cucumbers into longer strips, they should be slightly smaller than the sausages. Drain the peas and rinse from excess brine. Chop the onion finely.
- In a bowl, combine all the ingredients to make a salad, add mayonnaise, mustard, and finally season with salt and pepper to taste. Mix everything so that the flavors come together.
Serve with fresh bread
