I think it’s high time to introduce everyone to my favorite vegan sandwich spread – spicy tofu spread! Forget all these boring products in the shops, this spread will rule your sandwiches and make your life so much better!
Since my typical breakfast is usually bread or rolls, I think I tried all the sandwich spreads that are available in Czech Republic. You can find some really tasty ones but let me tell you, they all get boring after some time. Except my spread.
I don’t really think I can call it mine, as I got inspired by the spread I used to buy in Tesco, but it’s no longer there. When I realized they don’t sell it any longer, I decided to take a step forward and try to recreate the taste using my memory. And it worked! 😍
LET IT SIT – the spread tastes the best a day after so go ahead and store it in the fridge overnight. If you’re one of the impatient ones, you can eat it right away, it will taste great but in my personal opinion, the day after is when it tastes best.
TOFU – you can use any kind of tofu, although my favorite is smoked or marinated. Regular tofu will do the job too, but the taste will not be that nice and rich.
INGREDIENTS
- 1 smoked or marinated tofu
- ¼ onion
- small piece of red pepper or marinated pepper
- Spring onion
- 2 tbsp mayo
- 1 tbsp ketchup
- 1 tbsp sweet chilli sauce
- Salt, pepper
SPICY TOFU SPREAD – PREPARATION
Smash the tofu using a fork, I don’t recommend using the blender for it, the texture will not be pleasant. If you use for, you will get some nice smaller and bigger chunks in your spread.
Chop your onion and red pepper finely and add it in. In a separate bowl mix mayo, ketchup, sweet chilli sauce, salt and pepper. There’s no need to add too much salt if your tofu is smoked or marinated.
If you’d like to experiment with the taste, you can add some smoked paprika, mustard or soy sauce. Mix everything together and in the end, add some chopped spring onion. Leave it in the fridge overnight in a closed container.
