The wonderful time of Christmas is coming soon and the things that we should not forget to prepare are traditional dishes, including gingerbread cookies! These are completely vegan and very easy to make.
There are always lots of cookies in various shapes on my family table on Christmas Eve. Each of them tastes wonderful and I must admit that I often can’t get away from them. Gingerbread cookies are actually one of the easier cookies because we don’t even need cookie cutters. All you need is a little bit of your imagination and even a glass to create some beautiful shapes.
When it comes to decorations, you know that there are plenty of them in stores, ranging from ready-made icings to sprinkles, pearls and toppings. I tried to make my own frosting and it paid off. Even the colors came out great!

ICING – to make multicolored we can use natural ingredients. To get purple, we need beetroot juice, for pink – raspberry syrup. The yellow color can be obtained by adding turmeric to the icing. A little bit is enough to not taste the flavor of turmeric and give it a nice color at the same time.
DATES – they replace both sugar and eggs. Still looking for a good egg replacement, but in this case the dates work pretty decently. You can get ready-made date mass in supermarkets and that’s what I used. When you can’t buy it, just soak the dates in water for a couple of hours and blend it.

INGREDIENTS
- 0.5 kg of wheat flour
- 2 flat tablespoons of cocoa or carob
- 1 flat tablespoon of baking soda
- 1 level tablespoon of baking powder
- 2 tablespoons of gingerbread spice
- 1 cup of dates
- 0.5 cups of any plant milk
- 150 ml of rapeseed oil, grape seed or sunflower oil
- half a cup of powdered sugar

GINGERBREAD COOKIES – PREPARATION
- We start with dates – blend them smoothly with plant milk. Pour flour, cocoa, baking soda, baking powder, gingerbread spice and powdered sugar into a bowl.
- Slowly add wet ingredients to dry ingredients, if the dough is too dry, add a little more milk.
- Knead by hand for about 5-10 minutes to a smooth, slightly moist, compact mass.
- We divide the dough into parts, roll it out so that it is 0.5 cm thick. We cut out any shapes and put them on baking paper.
- In the oven preheated to 180 degrees, bake gingerbread cookies for about 7-8 minutes, be careful not to burn them. The games will be cooled down and decorated with icing.
