Sweet moments in the kitchen make me more happy than cooking new recipes. This is mainly because I never thought that I would be able to bake anything sweet.
And here’s a surprise – blueberry rolls, that is nothing else than yeast dough rolls filled to the edge with delicious blueberries and covered with sweet icing.
Let me just say one thing here: it will be a treat for the whole family! These pastries do not require a lot of time or dedication and yet, they taste amazing. You will be surprised how much pleasure they bring.
BLUEBERRY – I made this recipe in the summer, when fresh blueberries were available at every market, but I think that if you use frozen ones, it will come out very similar.
FILLING – do not limit yourself to blueberries (although yes, I know they are delicious). Try to make a nut-cinnamon filling, or use apple mousse and apple pieces, or maybe you will feel like a raspberry filling? The basis is a cake that you can easily modify when it comes to fruit.
INGREDIENTS
pie:
- 3 cups of plain flour
- 1 cup of soy milk
- ½ cup of rapeseed oil
- ⅓ cup of sugar
- 8g dry yeast / 15g fresh yeast
filling:
- 2 cups blueberries (can be frozen)
- lemon zest
- 2-3 tablespoons of sugar
frosting:
- 1 lemon juice
- powdered sugar
BLUEBERRY ROLLS – PREPARATION
- Knead the yeast dough: add sugar and yeast to the flour (if you use fresh yeast, make a leaven out of them), then knead the dough by hand for a few minutes, add the soy milk mixed with the oil. Put the dough into a bowl and set aside in a warm place for about 40 minutes.
- Mix the blueberries in a bowl with sugar and lemon zest, mash them slightly to release the juice.
- When the dough has risen, knead it again with your hands. Roll it out on a floured countertop in a rectangular shape. Brush the entire surface of the dough with the blueberry filling, then roll the dough into a long roll and then cut it into 10 pieces.
- Put them in a casserole dish or a tall baking tray, smeared with oil.
- Bake for about 30 minutes in the oven at 180-190 ° C. Set them aside to cool and pour over the frosting.
- You can prepare the icing by mixing lemon juice with powdered sugar – start with a smaller portion of the juice, keep adding sugar and mash until smooth.
