Summer is in full swing and the recipes are also truly summer-style! Today, on a plate, lemon spaghetti with asparagus and green peas. It smells like sun and holidays! This simple pasta will delight everyone, it is simple to make and will take you less than 15 minutes. It is perfect as a summer dinner as it is not very hot, has simple ingredients and is an incredibly light dish.
Green asparagus is still in stores, and green peas can be bought both fresh and frozen, of course the fresh one will be much tastier, but the frozen one will not disappoint you either. And if you’re looking for a different asparagus recipe, be sure to try puff pastry pockets.
PASTA – I like spaghetti pasta in simple recipes, but if you are not a big fan of this pasta, just use a different one. Remember, however, that it should not be overcooked as you will still be mixing it with hot oil and vegetables. Try to keep it al-dente.
CHERRY TOMATOES – I like them baked lightly in the oven or sautéed in olive oil on a pan with a pinch of salt and pepper, but you can also garnish your plate with raw tomatoes if you don’t like them hot.
INGREDIENTS
- 200g of spaghetti
- 200g of asparagus
- 50g of fresh green peas
- 3 cloves of garlic
- the juice of 1 lemon
- a handful of fresh basil
- a few cherry tomatoes for garnish
- salt pepper
LEMON PASTA WITH ASPARAGUS – PREPARATION
- Chop the onion finely and chop the garlic. Cook the pasta al dente and set aside after draining.
- Remove the ends (about 5 cm) of the asparagus and cut into about 5 cm pieces, put them in salted boiling water with the frozen peas and cook for 5 minutes (remember not to overcook them), then drain.
- In a frying pan with hot oil, fry the onion and garlic, add the squeezed lemon juice, half of it for now, so that the pasta is not too sour. Add asparagus and peas, season with salt and pepper to taste.
- Add the pasta to the pan, turn off the stove and mix everything thoroughly. When the pasta is not lemony enough, add the rest of the lemon juice.
- Garnish with freshly chopped basil and cherry tomatoes. And it’s ready!
