Woohoo! Comfort food on the plate! Today we serve this beautiful, fragrant vegan meatballs with tomato sauce with pasta. And not just any kind of pasta, but the one I remember from my childhood – small shells! A very pleasant and warming dish that will simply take you back to you childhood, only in a slightly different option – it’s completely vegan!
I was wondering whether I should create a recipe for bean, millet or soy meatballs here, but when I was walking around the supermarket, it turned out that they already sell vegan minced meat, and it’s not as expensive as it seems. I don’t think it should be used to make burgers, these are already available in every store, but why not use it for the meatballs? They turn out wonderful and fragrant!
SAUCE – well, I used the simplest recipe for tomato sauce here, because it makes this dish so pleasant, but you can easily replace it with mushroom or dill sauce.
MEATBALLS – are you crazy-busy and you don’t have time to prepare your dinner? All you need to do is buy ready-made meatballs in the store. They won’t be as fluffy and delicious, but it’s a quick dish that anyone can make even with their eyes closed.
INGREDIENTS
- 1 pack of vegan minced meat
- 200-300g shell pasta
- 1 passata (about 400g)
- 1 onion
- 2 cloves of garlic
- chopped parsley
- 1 tablespoon of dijon mustard
- a pinch of oregano and hot pepper
- pinch of sugar
- salt pepper
VEGAN MEATBALLS WITH TOMATO SAUCE – PREPARATION
- Peel the onion and garlic, chop them finely and fry in a pan until the onion turns brown.
- Put the mince into a bowl and add to it: chopped parsley, dijon mustard, salt, pepper and fried onion. Mix everything thoroughly and form meatballs.
- Fry the meatballs in a pan with vegetable oil or brush with a little oil and bake in the oven at 180 degrees for 15-20 minutes.
- Pour the passata into a pot, add salt, pepper, oregano, hot pepper and parsley and simmer for 10-15 minutes, then add a little sugar in the end.
- Cook your pasta al dente, then pour the sauce over it and place a few meatballs on top. Garnish with parsley. And it’s ready!
