I don’t understand why I haven’t uploaded here any dishes I make for dinner regularly – one of them is vegan spaghetti bolognese! I got totally hooked on new, attractive flavors, and yet each of us loves classic flavors. In case of Bolognese sauce, I don’t know who doesn’t.
My whole family eats it, all my friends cook it at home, so why not prepare a recipe for you for a delicious bolognese with soy instead of meat? It’s delicious, incredibly easy to make, and you can easily prepare a serving for the whole family in 30 minutes.
Classics at its best, I guarantee you that even carnivores will like this version!
TOMATOES – in the summer, yes, I highly recommend using fresh tomatoes for an amazing aroma. But don’t lie to yourself, in the off-season for tomatoes, just use quick passata, even the cheapest one will do the work. When the sauce is too acidic, just add a teaspoon of sugar or agave syrup to it.
HERBS – and here the principle is similar to the principle of tomatoes. It’s clear that fresh herbs are wonderful, but I prefer to use some of them in the dried version because they just taste better in some cases. I mean, for example, oregano, which has a completely different taste when fresh, and I don’t really like this taste in bolognese. But go ahead and experiment!
INGREDIENTS
- 500ml of tomato passata or canned tomatoes
- 100g of soy granules
- 1L of broth
- 1 onion
- 2 cloves of garlic
- a little tomato puree
- a handful of olives for decoration
- fresh basil
- oregano, basil
- a pinch of cinnamon
- sweet pepper
- smoked paprika
- soy sauce
- oil
- salt pepper
VEGAN SPAGHETTI BOLOGNESE – PREPARATION
- Boil the soy granules for 5 minutes in broth with smoked paprika and soy sauce, drain and set aside.
- Fry the chopped onion and garlic in olive oil. When the onion turns golden, add the tomato sauce and stir all the time for about 5 minutes, until it starts to turn dark.
- Add passata or canned tomatoes, oregano, basil, sweet pepper and a pinch of cinnamon, add the granules and cook for about 15 minutes until everything thickens. If the sauce is too acidic, add a pinch of sugar, season with salt and pepper.
- Serve with spaghetti or other favorite pasta, put sliced olives and fresh basil on top.
