Today we are baking a special cake – green tea mint brownie. Well, nothing more than a simple and delicious brownie with a green tea and mint glaze. Jesus, I didn’t expect it to turn out so well!
The color probably does not appeal to anyone, dark brownie, dark green icing with green tea and mint flavor are definitely not attractive. This cake does not attract the eye with its charm, but I can assure you – it’s amazing.
I always encourage you to experiment in the kitchen, adding or changing this and that, but here this experiment exceeded my wildest expectations. At first, the glaze was supposed to be a plain mint glaze, but it turned out that it didn’t work out at all, so we started an experiment at home – and it turned amazingly delicious!

COCOA POWDER – Use this ultra-intense, low-fat cocoa powder. It is strong, aromatic and gives the dough great color and flavor.
ICING – if you don’t like the combination of mint, green tea and cocoa, try some other flavors. Orange and ginger? Or maybe classic strawberry or salty caramel? Give it a try and share your tips for the perfect icing.

INGREDIENTS

- 2 cups of plain flour
- 1 cup of cocoa powder
- 1.5 cups of brown sugar
- 1 teaspoon of salt
- 1 teaspoon of baking powder
- ½ teaspoon of baking soda
- 1 cup of oil
- 1.5 cups of vegan milk
icing
- 200 ml of water
- 4 green tea bags
- 2 bags of mint tea
- mint flavor or ground fresh mint or mint candies
- 1 tablespoon of potato flour
- 4 tablespoons of sugar

GREEN TEA MINT BROWNIE – PREPARATION
- For the dough, mix all the dry ingredients together and then slowly pour in the milk and oil. Stir the whole thing for about 5 minutes so that it does not have any lumps and that it’s nice and smooth.
- Put the dough into a baking pan with baking paper on it or smeared with oil. Bake it at 180 degrees for 20-25 minutes. Use a long toothpick to check if the dough inside is still raw. Then, leave the ready dough to cool down.
- Put the hot tea and mint in 200ml of water and make a strong infusion. Then boil the stock in a pot, add sugar, aroma or mint candies. Cook for about 5-10 minutes, adding the potato flour at the end, remember to stir it so it won’t turn lumpy.
- When the glaze is almost completely cold, pour it over the cake and put it in the fridge for a few hours.
