Today it’s time to challenge ourselves so I decided to share this wonderful recipe with you – caramel-apple tofu-cheesecake. You won’t believe how delicious it is!
I know, I know, its preparation looks like a space rocket manual, but it only seems to be like that. Yes, it has a lot of ingredients (although inexpensive) and a lot of steps of prep (although simple ones), it also consumes a bit of time, but such a recipe is not something you made every week or month. It’s a very festive and festively delicious cake!

I changed only a few ingredients to those more easily available in the Czech Republic. This miracle comes out exactly as you describe, it is delicious, fluffy and tastes good to everyone I gave it to try!
Today I don’t add any additional tips or suggestions, the recipe itself is a challenge, so get to work, it’s really worth it!

INGREDIENTS
base:
- 160g of wheat flour
- 2x tablespoons of ground linseed (you can ground it in smoothie maker)
- 6 tablespoons of water
- 1.5 tablespoons of oil
- 1.5 tablespoons of powdered sugar
- pinch of salt
apple filling:
- 1 jar of apple puree
- 2 apples
- 1 cup of water
- 80g of powdered sugar
- 3 tablespoons of potato flour
- 1 tablespoon of lemon juice
- 1 teaspoon of cinnamon
- pinch of salt
- a pinch of ground cloves (or 2 whole – remember to take them out!)

“cheesecake” filling:
- 1 natural tofu
- 100g cashew nuts
- 150ml of coconut milk
- 80g maple syrup or sugar equivalent
- 4 tablespoons of lemon juice
- 3 tablespoons of potato flour
caramel:
- 3 tablespoons of brown sugar
- 150ml of coconut milk
- a teaspoon of coconut or other oil (not olive oil!)

CARAMEL-APPLE TOFU-CHEESECAKE – PREPARATION:
base:
mix ground flaxseed with water and leave it in the fridge for 10 minutes. Then mix all the ingredients to make a flaky but firm dough, spread it evenly on a baking tray and bake at 180 degrees for 20 minutes.
apple filling:
peel the apples and dice them finely. Combine all ingredients in a pot and cook for a few minutes until they’re firm. Put half of the mass on a baking tray with a base and put in the fridge to cool.

“cheese” filling:
soak the nuts in hot water for 20-30 minutes. Then combine all the ingredients in a blender to get a nice creamy texture. Carefully transfer it on a baking tray and bake at 180 degrees for 45-50 minutes. After this time, open the oven and leave the cake in it for another 10 minutes. The cheese filling will still not be baked inside, but don’t worry, it will get the right consistency in the refrigerator.
Once the dough has cooled down, use the second half of the apples on top of the cake and put the cake in the fridge for a few hours.
caramel:
combine all ingredients and when they boil, reduce the heat slightly and cook for 5 more minutes, don’t forget to stir it. Pour it over the top of the cake.
