Today I present to you a recipe for quick vegan feta cheese, made of tofu in a simple and quick way. Sure, it doesn’t taste exactly like feta cheese. But it’s good enough to replace cheese in salads and many different dishes.
If I have to answer the question which is my favorite salad, I will answer it without any hesitation: it’s a greek salad. It is best, of course, when we order it in sunny Greece… In one of the pubs by the market, where the salad consists mainly of deliciously fragrant tomatoes and cucumbers, red onions, and on top, like a huge cherry on the cake, there’s a thick slice of feta cheese topped with olive oil. What a wonderful holiday memory!
Vegan feta cheese made with tofu is supposed to gently resemble the real one without too much effort. After all, tofu itself is somehow cheese. When it’s marinating for a day, it acquires a sour and salty taste and becomes a bit more brittle thanks to the acid from lemon or pickled cucumbers.

SOUR CUCUMBER JUICE – this one for the marinade is absolutely perfect, but I know it’s hard to get it in the Czech Republic. I make sour cucumbers myself at home, so I always have plenty of sour cucumber water in my fridge, I use it for soups and sauces (it enhances the flavors and is VERY healthy!). You can try using pickled cucumbers juice or sauerkraut juice. If you don’t find any of these, try lemon juice alone (just use a little bit more).
MARINADE – I also recommend experimenting with it, you can add a little olive brine, capers (for an even more sour taste), squeezed garlic or a lot of dried herbs. The marinated vegan feta may be left in the refrigerator for a week.

INGREDIENTS
- 1 cube of natural tofu
- 200ml of olive oil
- 5 tablespoons of sour or pickled cucumber juice
- 5 tablespoons of lemon juice
- 2 tablespoons of nutritional yeast
- 1 tablespoon of salt
- 1 teaspoon of dried garlic
- spoon of capers
- dried herbs (oregano, basil)

VEGAN FETA CHEESE – PREPARATION
- Mix all ingredients except tofu thoroughly together, prepare the marinade.
- Remove the tofu from the package and dry it thoroughly from the excess water – you can wrap it in a paper towel and press it with something heavier to make the tofu as dry as possible. Cut the tofu into bigger cubes.
- Place the tofu cubes tightly in a glass jar and pour the prepared marinade over them. Close the jar and put it in the fridge. It tastes best the next day or 2-3 days after marinating.
