I only discovered Zoodles a few weeks ago and let me tell you that it surprised me how something so good can be so easy and quick to prepare. Today I’m cooking Thai zoodles with peanuts and coriander. Holy cow how good it is! This is only the first of my delicious zoodle recipes, but I promised myself it won’t be the last!
Thai zoodles is a fantastic pasta alternative! Zucchini does not fall apart, is crunchy and has fewer calories than spaghetti! There are several ways to make zoodle. There are machines in the shape of “sharpeners” that you can use to get zoodles by hand (in kitchen supply stores you can buy it for 60czk). There are also such cool machines called spiralizers, thanks to which the preparation of zoodles is ultra-fast and hassle-free. Yes, these things cost a bit more, but they are a great gift idea!
It is true that we cannot treat zucchini like pasta because it behaves quite differently when cooking. Remember that the zucchini releases the water during frying, which will thin out basically any sauce that you prepare for your dish. So it is important to fry it relatively fast, and add the sauce right at the end, just to mix it with the zoodles.

ZUCCHINI – remember to buy it super-fresh, the ones from the supermarket are often soft and not firm anymore. Cutting blades will do a lot better with fresh zucchini.
PEANUT BUTTER SAUCE – I tried to make it by blending all the ingredients using a hand blender, but I already know that it’s best to simply combine the ingredients in a pan by heating all of them. Thanks to this, it will combine nicely with zoodles and you will immediately see what the texture of the sauce will be on the plate.

INGREDIENTS (for 2 servings)
- 2 zucchini
 - 1 carrot
 - ½ red onion
 - ½ red pepper
 - fresh coriander
 - a handful of peanuts
 - 1 teaspoon of sesame seeds
 
sauce:
- 2 tablespoons of peanut butter
 - 4-5 tablespoons of sweet chilli sauce
 - 2 cloves of garlic, crushed
 - ½ lime juice
 - salt pepper
 

THAI ZOODLES – PREPARATION
- Start with carving out the zoodles shapes in the machine. Put the zoodle into a bowl and set aside. Then, slice the red onion thinly, cut the carrot into thin strips and slice the pepper into thin strips or cubes (depending on your preferences).
 - Combine the sauce ingredients in a pan and heat it over low heat to create a nice smooth sauce.
 - In a large frying pan, fry the onion in olive oil, add the carrot and pepper to it and fry for 5 minutes. Then put the zoodle in and quickly fry it for a few minutes to get it warm. Finally, add the sauce and mix everything.
 - Transfer the zoodles into the plates and sprinkle each of them with chopped peanuts and sesame seeds. In the end, add the coriander on top.
