The truth is, I don’t always feel like cooking big time, I don’t always feel like eating “healthy”. Sometimes all of us just need a decent dose of carbs and comfort food… And that’s why we’re having toasted mushroom baguettes!
Mushroom baguettes are something that reminds me of my student days in Krakow where I was able to get them on every corner any time of the day. They’re cheap, delicious and filling. It doesn’t take too much time or too many ingredients to make them at home, they are a fantastic party food, a quick lunch or just a delicious snack.
The wonderful thing about toasted mushroom baguettes is that you can put anything one them – vegan ham, peppers, corn, olives – you are only limited by your imagination!
CHEESE – I used vegan cheese here, the one that you can buy in the block but you can also get grated vegan cheese and you will save a lot of time.
FRIED ONION – I know it is not easy to buy it everywhere, you can try in a store with Asian products, or make it yourself (bread some chopped onion in plain-flour and deep-fry). YES, it has a billion calories, but it is delicious
SAUCES – although standard baguettes should be eaten with ketchup, they taste equally good (or maybe even better) with garlic or spicy sauce – we have full freedom here!

INGREDIENTS
- 2 baguettes
- 250g of mushrooms
- 1 onion
- 1 clove of garlic
- a handful of vegan cheese (according to how much you like really)
- fried onion or chives
- ketchup or other sauce
- salt and pepper

PREPARATION
- Clean the mushrooms and slice them, chop the onion, smash the garlic.
- In a hot frying pan, fry the onion and garlic in oil, then add the mushrooms – NOTE – do not salt them right away, they will start to release a lot of water, you should add salt at the very end
- Preheat the oven to 180 degrees, cut the baguettes lengthwise and place them on a baking tray. Place the mushrooms and cheese on the baguettes and put them in the oven for 10 minutes (depending on the oven, it may take less time). Wait until the baguettes are crispy and the cheese is melted.
- At the end, top them with the sauce and sprinkle with onion or chives. Enjoy your meal!
