Broccoli salad is a very interesting alternative to standard salads, which we often get bored with. I felt like eating something healthy and thought it would be the perfect dish for today. I used the blue cheese here because I just wanted it, but you DO NOT HAVE to use it if you are vegan. I just wanted it so much today and I couldn’t help but buy it.
I will not write too much about broccoli salad as there is nothing complicated about it. It is simple, tasty and filling. And after you eat it, you feel like a young god, because of all these vitamins!
This salad goes very well with almond flakes, garlic and radish, with yoghurt dressing. I used to make such dishes with the addition of an egg but if you feel that there is something missing in this salad, fry some tofu with kala namak salt – it will taste a little like egg substitute.
BROCCOLI – it is important not to boil it in water for too long, it will lose its color and turn into a mush, just put it in boiling water for a while and it will be crispy and delicious, and it will not lose vitamins thanks to that
DRESSING – I used a vegan yogurt and a few things that I like to add to salads, such as dill and French mustard, but here I also encourage you to experiment, because it is possible that some other sauce may work better with broccoli

INGREDIENTS
- 1 broccoli
- 5-6 radishes
- 10 capers
- green onion
- 2 tablespoons of almond flakes
- 1x vegan yogurt
- 1 teaspoon of dill
- 1 large clove of garlic
- 1 teaspoon of French mustard
- salt and pepper

PREPARATION
- Cut the broccoli into smaller flowers, slice the radish, chop the green onion
- Put the broccoli into boiling water and cook for a few minutes so that they do not lose their color and shape, drain and leave to cool.
- Mix vegan yogurt with mustard, garlic, dill, salt and pepper
- Place the broccoli with radish, capers and onion in a bowl, sprinkle with almonds, then put the dressing in several places and serve it like this!
