I’m not a big fan of sweet breakfast, but coconut chia pudding was my life’s discovery. I didn’t believe how easy it is to prepare, how good it can taste, and how healthy it is!
Chia seeds are high in fiber, omega-3s and lots of protein! They can positively affect the digestive system, your heart and circulatory system. Their regular consumption improves the condition of the skin – so many advantages!
Another plus of this dish is that you can make a batch that will be enough for 3-4 breakfasts, and it will not take more than 10-15 minutes to prepare it.
COCONUT MILK – It is quite caloric on its own, but in supermarkets you will also get a “light” version which is about 10% fat. It is less thick, but in this case the chia seeds will thicken the whole thing and it will turn out delicious.
SUGAR – you can replace it with honey, xylitol, and even skip it altogether when looking for a lighter alternative.
Alright, let’s get started – it will only take us couple minutes!
INGREDIENTS
- 400ml of coconut milk
- 4 tablespoons of chia seeds
- 2 tablespoons of coconut flakes
- 1 tablespoon of sugar or honey
- mango, kiwi or whatever fruit you like
COCONUT CHIA PUDDING – PREPARATION
OPTION 1
- Mix milk, chia, coconut flakes and honey in a bowl, and you can pour it into smaller bowls or jars right away. Put your favorite fruit or mango puree on top.
- Stir at least 3 times every 20-30 minutes and then refrigerate for a few hours.
OPTION 2
- In a saucepan, heat the coconut milk, add chia seeds, sugar (or honey) and coconut flakes to it, bring to a boil and turn off the heat. Pour into bowls, when it’s cool it’s ready to eat.
- Garnish with fruit and enjoy your meal!
