There is something very fascinating about this burrito bowl that makes me very excited every time I prepare it. Completely different flavors complement each other perfectly here, the colors improve your mood and believe me, it is not a difficult dish at all.
BEANS – I like to use two types of beans, it gives your burrito bowl a bit more interesting texture. You can also add some veggie-meat pieces into it.
SALSA – I always make two of them with completely different flavors: tomato salsa and spicy mango salsa. In case you don’t have time to prepare two, one is enough. If you can’t buy mangoes anywhere you can choose fresh pineapple.
RICE – I cooked basmati rice here, but you can use any, it tastes great when you add a pinch of cumin when boiling it.
This dish is great to make a little extra and use it as a lunch for work.
INGREDIENTS
- red beans 1 can
- butter beans 1 can
- corn 1/2 can
- honey 1 tbsp
- soy sauce
- frank’s hot sauce or some other hot sauce
- tomato puree
- smoked paprika
- cumin
- dried coriander
- 2 tomatoes
- 1 mango
- 1 onion
- fresh coriander
- 1 lime
- Jalapeno peppers (or a small chilli)
- rice
- lettuce
- a handful of grated cheese (preferably cheddar, but other is also ok) If you want to make it wegan just skip the cheese
- natural Alpro
- taco seasoning
BURRITO BOWL PREPARATION
- First of all, we start with the beans for our burrito – heat the previously drained beans and corn in a frying pan, add the following: tomato puree, smoked paprika, cumin, coriander, honey and soy sauce. At the end add the hot sauce and stir so that it does not burn. Keep it on medium-heat for 10-15 minutes.
- Remove the tomato seeds (you can also peel them), cut them into small pieces, add half of a chopped onion, some chopped coriander and ½ lime juice. Season with salt and pepper.
- Dice the mango, add remaining half of the chopped onion, add the remaining ½ lime juice, coriander and chopped hot pepper. When salsa it is not sweet enough, you can add a bit of sugar. It’s supposed to be sweet, spicy and sour.
- Finally, mix your vegan yogurt with taco seasoning, cook your rice, wash the lettuce. Put everything in a bowl, use the jogurt dressing on top of your lettuce.
