Do you want to do something nice for your loved one or are you looking for an idea for quick and healthy dessert for your family? Coconut chia cake is running to the rescue! It’s a wonderful chia pudding in the form of a cake, so you can eat it with no regrets!
The whole cake is bake-free, which also means that you don’t have to worry about whether it will bake or everything will go according to plan – it will go for sure! As for decorations, you can choose literally anything that comes to your mind, caramel glaze, chocolate, mango mousse, favorite fruit, whatever you like!

AGAR AGAR – chia pudding holds a nice shape by itself, but I recommend adding agar to it, 5 grams is enough for the dough to hold its shape and it will make it easy to slice the cake.
COCONUT MILK – If you don’t like the coconut flavor you can add any other plant-based milk, but remember that you need to use a little more agar then as plant-based milk is usually thinner.

INGREDIENTS
chia dough:
- 800 ml of coconut milk
- 8 tablespoons of chia seeds
- 4 tablespoons of coconut flakes
- 5 g agar agar
- 3 tablespoons of brown sugar or substitute
cake bottom:
- 2 cups of oatmeal
- 2 teaspoons brown sugar (dissolved in 50 ml of water)
- 50-100ml of milk
- 150g of ground dates
- 2 teaspoons of cocoa

COCONUT CHIA CAKE – PREPARATION
- Grind the oatmeal until it becomes smooth. Mix the ingredients for the bottom thoroughly with a mixer, if you don’t have a good mixer, you can try to combine everything by hand in a saucepan on low heat.
- Put the ready dough on the bottom of the cake tin and put it in the fridge.
- In a saucepan, combine all ingredients for chia dough until it comes to a boil, boil for about 5 minutes, stirring frequently, then set aside to cool.
- When the chia mass is not hot anymore, take the form with the bottom out of the fridge, pour the chia dough and put it in the fridge for a few hours.
- Decorate the cake with your favorite fruit or chocolate. So simple and quick!
