Time for a simple, crispy and protein-rich salad – say hello crunchy chickpea salad with tahini dressing! Are you wondering what more can you use your canned chickpeas for? It is not only suitable for hummus, it can be used to make a wonderful salad full of vitamins!
The preparation is very easy, so it works great as a healthy lunch to work, and the tahini sauce – well, I could write a separate blog post about it, it’s so wonderful!
I admit that tahini sauce is a true discovery in my recent years and I really like to use it in salads, bowls or as simply a dip for fresh vegetable sticks.
I like this type of salads because they’re very crunchy and have a varied structure, thanks to which they’re not boring and sad like ordinary iceberg lettuce salads.
CHICKPEA – I mixed chickpeas with white beans here so that they have different textures and flavors, but you can just use two cans of chickpeas and it will be ok too. Remember to get rid of the brine.
TAHINI DRESSING – I’ll tell you right at the beginning – prepare 4 times more than mentioned in the recipe, seriously! It is insanely good! However, remember to use cold water for it, thanks to which the sauce will become creamy and all the ingredients will combine smoothly.
INGREDIENTS
- 1 can of chickpeas
- 1 can of white beans
- 3 carrots
- 2 pieces of celery sticks
- a handful of pumpkin seeds
- a handful of chopped green onions
- a handful of chopped dill
- 1 tablespoon of soy sauce
dressing:
- 1 clove garlic, crushed
- 1 tablespoon of lemon juice
- 2 tablespoons of tahini
- pinch of cumin
- 1 tablespoon of olive oil
- 3 tablespoons of cold water
- salt pepper
CRUNCHY CHICKPEA SALAD – PREPARATION
- Mix the ingredients for the dressing (preferably in a hand blender).
- Roast the pumpkin seeds on a frying pan until they are warm, then turn off the heat and pour in the soy sauce, stirring vigorously so that it does not burn.
- Grate the carrots, cut the celery into small pieces. Chop the onion and dill finely. Mix all ingredients (including pumpkin seeds).
- Pour over the tahini sauce and mix.
