Today I will show you a side dish – cucumber salad, which is one of my favorites. I promised myself that I would start this year with healthy recipes to encourage you to eat fresh vegetables and less fried food. It is the perfect addition to your dinner, a nice snack or one of the dishes for your guests at a party.
In Czech cuisine, salads or fresh vegetable toppings are often not added to main courses, and I would like to invite you to try this type of nutrition. Even when you just want to eat a veggie cutlet with potatoes, add some super fresh salad to it, you will feel much better!
The cucumber salad tastes a bit like tzatziki sauce, but the cucumbers are not grated, but cut into thin slices, which makes it much more pleasant to eat. I also used less garlic in it than for tzatziki.

CUCUMBER – I will always remind you that my favorite cucumbers are ground cucumbers. they are much tastier, more crunchy, have smaller seeds and release much less water. It is known, however, that in winter it is hard to get them fresh, because they do not grow at this time of the year.
GARLIC – if you do not like garlic as I do and prefer, however, when your dishes are less garlicy or less spicy, just use a little dried garlic instead of fresh garlic, it has a slightly more subtle taste.

INGREDIENTS
- 2 large cucumbers
- 150ml of vegan cream or vegan thick yogurt
- a bit red pepper for decoration
- a bunch of dill
- a handful of chopped green onions
- 1 garlic clove
- herbal salt or plain salt
- pepper
CUCUMBER SALAD – PREPARATION
- Peel the cucumbers, cut them into thin slices and put them in a bowl. Salt them and set aside for 30 minutes to let them release some water.
- After 30 minutes, drain the cucumbers from excess water. If you prefer your cucumbers to be crispier, skip the salting and draining and go straight to the next step. Chop the dill and green onion.
- In a separate bowl, combine the cream or yogurt, smashed garlic, herbal salt and pepper together and mix. Dice the red pepper into small cubes.
- Combine red pepper with cucumber and dressing and serve right away.
