This “no-fish” tempeh spread reminds me of my childhood flavors. I absolutely love all kinds of fish spreads, especially those made from smoked fish. What is amazing about this spread is that it is very easy to prepare, it is enough for 2-3 breakfasts (unless you don’t stop yourself and eat it all at once, I don’t judge, it happened to me too).
I have to admit that I often eat breakfast using products available in stores, and very often it turns out that the flavors of the store-bought spreads get bored very quickly, they often blend, or their consistency is just not right.
And this tempeh spread is something revolutionary that will change your mornings 180 degrees! I shared this recipe with my family and I am surprised how many opinions they have about it (all positive!) For some it reminds of smoked mackerel spread, for others it resembles the taste of bacon, but everyone likes it very much.
TEMPEH – I used smoked tempeh with it, you can often get it in a popular drugstore and in healthy food stores, but if you can’t find it anywhere – use ordinary tempeh and add some smoked paprika or smoked flavor while blending.
PICKLES – sour cucumbers will work best in this recipe, but I know that they are not popular in the Czech Republic, ordinary pickles will also create a nice flavor
INGREDIENTS
- 200 g of smoked tempeh
- 1 small onion
- 1 larger pickled cucumber
- 3 tablespoons of vegan mayonnaise
- 1 teaspoon of mustard (I like dijon with it)
- chives or green onion
- a dash of lemon juice
- 2 teaspoons of soy sauce
- salt and pepper
TEMPEH SPREAD – PREPARATION
- Cut the tempeh into 1cm slices, heat the oil in a frying pan, put the tempeh on it and fry on both sides for a few minutes, until golden brown.
- Dice the onion and pickled cucumber, chop the chives.
- Put the tempeh slices into a bowl, add mayonnaise, mustard, lemon juice, soy sauce, salt and black pepper and blend – but not until smooth, we want it to have an irregular texture.
- Finally, add the chopped onion, cucumber and chives and mix it all.
