Linzer cookies with jam are another sweet specialty that can’t be missed at my home during Christmas, just like gingerbread cookies. It is known that during the holidays it is difficult to deny yourself sweetness, and these cookies smell beautiful and taste wonderful.
I added a little more lemon to a traditional recipe and they turn out fantastic. They are basically two thin cookies, where the bottom cookie is smeared with jam and the top cookie has a tiny hole in the middle and is sprinkled with powdered sugar. Incredibly fragrant, simple cookies will be easy enough for every chef, even the beginner!

JAM – if you want to make vegan cookies, make sure there is no gelatin in the jam before buying it. I used a ready-made jam for linzer cookies, it is very sweet and dense. Although, if you have homemade jam at home, feel free to use it, it will be perfect!
FLOUR – I used plain flour, but you can also experiment with a different flour or add some sesame or poppy seeds to the dough. The cookies will then have a slightly different taste, maybe even more interesting!

INGREDIENTS
- 3 cups of plain flour
- 200g margarine (I used Hera)
- 1 cup of sugar
- 1 lemon
- jam or marmalade
- powdered sugar

LINZER COOKIES – PREPARATION
- Blend margarine and sugar together in a tall container, add the lemon zest and lemon juice. Then slowly add the flour and mix until you get a smooth mass that does not stick to your hands.
- Put the cake in a cool place for 1.5 hours. Then transfer the dough to the kitchen top and roll it thin (about 3 mm). Remember to sprinkle the top with flour before rolling, otherwise the dough may stick to the surface.
- Cut out your favorite shapes and put in an oven preheated to 180 degrees for 10 minutes on a baking tray with baking paper.
- When they cool down, spread them with jam and combine. We use powdered sugar for decoration.
