Mexican cuisine is not only tacos and burritos, it is also enchiladas! Usually the tortilla is filled with meat and beans, and today we will try vegan enchiladas with jackfruit and mixed beans! Completely vegan, dipped in strong sauce and baked in the oven!
I regularly go to my favorite Mexican restaurant for tacos, but enchiladas are something that I can easily prepare at home.
Give yourself a little pleasure and prepare enchiladas and you will feel a surge of positive energy!
BEANS – I won’t lie… This dish tastes best with black beans soaked the day before and cooked for a long time. But any other beans work just as well and take much less time.
JACKFRUIT – you can easily buy it in Asian stores, packed in a can. It is not difficult to prepare it, but you must remember to rinse it thoroughly so that it does not taste like the brine.

INGREDIENTS
Sauce
- about 500 ml of passata
- 1 teaspoon of cumin
- Chilli
- Pinch: dried garlic, salt, pepper, smoked paprika, oregano, cinnamon
- ½ limes
Rest
- 6 soft tortillas
- 1 can of jackfruit
- 1 can of beans (I used a bean mix)
- ½ peppers
- 1 teaspoon of smoked paprika
- 2 teaspoons of ready-made enchilada spice mix
- ½ teaspoon of dried garlic
- ½ teaspoon of dried onion
- salt pepper
- coriander
- a few Jalapeno peppers
- vegan cheese (optional)
VEGAN ENCHILADAS – PREPARATION
- We start with the sauce. Pour the passata into a pot and cook over medium heat, adding all the spices, sprinkle with a little lime juice, you can add approx. 100 ml of water or broth. Set aside.
- Rinse the jackfruit thoroughly, cut off the hard means, but do not throw them away. Tear the soft parts in your hands to make it look like chicken meat, cut the hard parts into small pieces. Rinse everything again and dry it with a cloth.
- Put jackfruit and spices on a hot pan with a bit of oil, fry for about 5 minutes. Add the beans and diced paprika and let it cook for another 5-10 minutes.
- Spread ⅔ of the sauce on the bottom of the ovenproof dish and leave the rest for later.
- Stuff the tortillas with jackfruit and beans and form the rolls, put them in an ovenproof dish. Pour the rest of the sauce over them, sprinkle with vegan cheese and Jalapeño.
- Bake for 20 minutes at 180 ° C.
