Spring came to us eventually and so that here comes the season for fresh vegetables. Wild garlic salad is a delicious confirmation of the changing weather. A snack full of flavor, delicacy and freshness, it will be a great addition to any dish.
Wild garlic has a delicate garlic aftertaste, which is not too spicy, and that is why it fits perfectly in a salad. Use vegetables that are starting to grow now – fresh butter lettuce, dill, spring vegetables – all this will make your salad smell all over the house.
It’s time for a decent dose of fresh vegetables! Rinse them well first, lettuce and garlic like to attract the insects 🙂

DRESSING – in this case I used a simple vegan yogurt and a bit of vegan may not to kill the taste of fresh vegetables, but go ahead and experiment, maybe some lemon and honey dressing? Or a strong curry sauce? I think there are many options to elevate the taste of this simple and yummy dish.
WILD GARLIC – you can buy it only in spring and usually only at farmer’s markets or fairs. It is a very seasonal plant that smells great in forests, but works very well in the kitchen. Salad made of it is something unusual, but I can assure you, you will like it!

INGREDIENTS
- 1 bunch of wild garlic
- 10 leaves of butter lettuce
- 5 radishes
- 3 ground cucumbers
- 80 ml of vegan yogurt
- 1 tablespoon of vegan mayonnaise
- a handful of chopped dill
- salt pepper

WILD GARLIC SALAD – PREPARATION
- Rinse and dry the wild garlic leaves, cut them into stripes and put them in a bowl.
- Rinse the salad thoroughly, get rid of excess water and then loosely tear it into smaller pieces, add to the garlic. Add the peeled and diced cucumbers and diced radish to the bowl.
- Chop the dill and add to the whole thing. Next, prepare the quick dressing. Mix the yogurt with mayonnaise, add salt and pepper and mix very gently with the vegetables in a bowl. Be careful so the lettuce does not fall down, but that it remains in a nice fluffy shape.
