Today we bake this kind of “fridge leftovers cake” – vegan carrot cake! This wonderful cake is fluffy and wet thanks to carrots and bananas, and the whole house smells like cinnamon when baking it! It’s not a diet food, but after all, half its volume is just carrots, so it’s probably not that bad, right?
The preparation is super simple, you don’t need to pay too much attention to details, because the cake comes out perfectly by itself. I used measuring cups, where 1 glass has about 230 ml – that is, the lower glass for drinks 🙂

BANANAS – the more mature the better, fresh bananas have too much starch and too little sugar. Fresh bananas are great to eat raw because of the starch, which is not digested in the body but acts kind of like fiber. However, for baking, we need those bananas which contain much more sugar, they are a great substitute for an egg in sweet baked goods.
FROSTING – below I have given you a recipe for a topping, which I personally wanted to try and I admit that it reminds me of perfect “American frosting”. But if you don’t like this type of topping, you can use chocolate glaze, thick vegan yogurt or homemade jam.

INGREDIENTS
on the cake:
- 1.5 glass of plain flour
- 1.5 teaspoons of baking powder
- 1 tablespoon of baking soda
- pinch of salt
- 2 teaspoons of cinnamon
- 2 glasses of grated carrots
- 2 ripe bananas
- ⅔ glass of oil
- ⅔ glass of brown sugar (or equivalent)
for the topping:
- ½ cup of cashews (previously soaked for 1-2 hours)
- 150 ml of plant milk
- zest of ½ orange and 1 lime
- 3 tablespoons of squeezed orange juice
- powdered sugar (3 teaspoons)

CARROT CAKE – PREPARATION
- First, combine the wet ingredients – banana, oil and brown sugar and blend until smooth. Then mix dry ingredients separately (flour, baking powder, soda, salt, cinnamon).
- Pour the dry ingredients into the wet ones and mix thoroughly. Finally, combine the mass with the grated carrot.
- Put the finished dough into a cake tin greased with oil and bake at 200 C for 50 minutes.
- In the meantime, blend all the ingredients for the frosting and heat it carefully in a saucepan until it becomes slightly thickened, be careful not to burn it!
- Take the cake out and when it cools down, decorate it with the frosting, you can sprinkle it with nuts, dried fruit or citrus zest.
