Sandwich spreads are definitely an important thing when you are opting for a plant-based diet. Vegan beetroot spread is definitely a simple and delicious alternative to ham and cheese sandwiches. The spread is very creamy and fluffy, full of flavor and beautiful color.
The ready paste is enough for a few good days, and when you do not feel like bread, you can easily use it as a pasta sauce (I tried it myself)! Just add olives, dried tomatoes and go ahead, the pasta will be delicious and purple!
The spread is perfect for decorating any sort of party snacks, it is distinguished by a beautiful strong purple color, and due to the fact that it has a delicate flavor, it will surely be enjoyed by all participants of the event.

TOFU – get the most ordinary natural tofu, the one that’s the cheapest in the store. It is absolutely pointless to spend more on unnecessary silken tofu (although it probably has an even more velvety structure), it is 4 times more expensive and not worth its effect.
HORSERADISH – beetroots are very fond of horseradish, but be careful with it, the taste can be very strong! Horseradish in a jar has a different spiciness, and some people just need a little to add a spicy touch to the dish that is being seasoned.

INGREDIENTS
- 1 cube of natural tofu
- 4 beetroots, peeled and cooked
- 1 teaspoon of horseradish
- 1 tablespoon of vegan mayonnaise
- lemon juice
- 1/2 teaspoon dried garlic
- salt, pepper
VEGAN BEETROOT SPREAD- PREPARATION
- Remove the tofu from the bag and lightly squeeze it out of the water.
- Cut the beetroot into larger pieces and put it together with the tofu into a tall dish, blend until smooth.
- Add the lemon juice, horseradish, mayonnaise, garlic, salt and pepper and blend until it gets a nice smooth and fluffy texture.
- Serve on sandwiches, as a pasta sauce or as garnish on your party snacks.
