Probably everyone has a time in their life when the last thing you wanna do is to spend the hours in the kitchen preparing food. I understand it perfectly well. That is why today I chose this fast and stress-free pasta with mushrooms and beans. It is practically preparing itself, the whole thing will take you 15 minutes.
I recently bought some really nice Italian pasta on sale in one of the supermarkets and wanted to try it and I think I hit the jackpot. But obviously, you can experiment with other types of pasta. I think that fusilli or farfalle will also be great here.

THYME – mushrooms absolutely love it, if you have it fresh, use it necessarily, but if not, then the regular dried one will be enough.
BEANS – I chose the butter beans because I like them very much, but ordinary small white canned beans will also taste good. Remember to rinse the beans thoroughly before adding them to the sauce.

INGREDIENTS
- 200g of pasta
- 100g of mushrooms
- ½ cans of white beans (small or butter)
- 150ml of vegan cream
- 1 tablespoon of capers
- ½ onion
- 1 clove of garlic
- thyme
- salt pepper
PASTA WITH MUSHROOMS AND BEANS – PREPARATION
- Slice the onion thinly, smash the garlic. Fry both with a bit of hot olive oil in a pan. Add the sliced mushrooms to the pan and fry them together, stirring for about 3 minutes.
- Then add the capers, beans, thyme, cream, salt and pepper. Reduce the heat and leave it in the pan so that the sauce gently heats up, remember to stir from time to time.
- In the meantime, cook the pasta, and when it is ready, take it out of the water and immediately put it into the pan to mix it with the sauce.
- You can sprinkle the finished dish with chives, fried onion or vegan cheese, depending on your mood.
And that would be it, a quick and simple dish that tastes very creamy and comforting.
